with potato

Ingredients
350 g Redi broccoli
2 potatoes
1 tbsp olive oil
1 pinch of salt
1 pinch of black pepper
Method
Preheat the oven to 200ºC using the top and bottom heating elements
Peel the potatoes, put them in a saucepan and cover with water and let cook for 25-30 minutes
Just before draining the potatoes, add the washed Redi and cook for 3 more minutes
Drain the Redi and potatoes and set aside to cool
Then, mash the potato and finely chop the Redi
Mix both ingredients together and season to taste
Take small portions of the mixture and shape them into cylinders or croquettes
Place on greaseproof paper on a baking tray and, when they are all done, brush with a little olive oil
Put them in the oven for 30 minutes, turning them halfway through
Tips & tricks
Add a few breadcrumbs to thicken the consistency if desired.
